pinned it. did it! 3 recipes

here are three recipes i pinned on pinterest and made.
with my thoughts on how they turned out included.

first up.
perfect salmon.  everytime.
my first thought.  really?  could it be?  seems too easy.
so i had to try it.
super simple.


directions
drizzle salmon with olive oil
sprinkle with salt and pepper
put in a cold oven
turn the oven on to 400 degrees
cook for 25 minutes

verdict:  Awesome!  super tender and moist. 
when the grill is not available due to freezing cold temperatures - snow - rain -
hail - robert isn't home - etc!
i will cook it this way every time.
i love when i find recipes that are keepers.





second up.
zucchini, black bean and rice skillet
sounded good and healthy.
we should try it.

ingredients
1 tablespoon canola oil
1 -1/2 cups quartered lengthwise, sliced zucchini
1/2 cup diced green bell pepper (or whatever color you choose)
1 can black beans, rinsed
1 can fire roasted diced tomatoes with garlic, undrained
3/4 cup of water
1 cup instant white rice (i used brown)
1/2 cup shredded cheddar and monterrey jack cheese blend (i used pepperjack)

directions
heat oil in large skillet over medium heat.
add zucchini and bell pepper - cook for 5 minutes - stirring occasionally
add beans, undrained tomatoes, and water
increase heat and bring to a boil

add rice, stir well.
cover
remove from heat
let stand 7 minutes or until liquid is absorbed
sprinkle with cheese

verdict: one word - boring!  it was just ok but i really think boring is the perfect word for this.
maybe you could spice it up and add some chicken and some additional spices.
i think i'll be tossing this recipe to the side.





lastly.
i had pinned this but it doesn't look like it has a name.
and of course there is no original source to link back to. sorry!
you can refer to the picture and pick out a name if you like!
ingredients
4-6 raw chicken breasts
new potatoes (i used regular potatoes)
green beans (or any other green vegetable you want!)

directions
arrange it all in a 9x13 dish (i made a smaller dish)
sprinkle everything with a packet of italian dressing mix
top with a melted stick of butter

verdict:  i honestly didn't have high hopes for this.  looked easy but i didn't think it would turn out to be a repeat.  but i was wrong!  obviously it's nothing special or fancy but perfect if you just want to throw something together quickly. the chicken was moist and the flavor on everything was great.
